Crunchy walnuts and whipped cream merry wonderfully in this simple Spanish dessert
1 cup walnut pieces
1/3 cup white sugar
1 cup whipping cream, chilled
1 tbsp white sugar
1 tsp vanilla extract
In a large skillet combine walnuts and 1/3 cup sugar. Cook, stirring constantly, over medium heat, until walnuts are coated with melted sugar. Remove from heat and pour the mixture carefully into a foil-lined cookie sheet. Spread in single layer. Cool and break into pieces. Store in an air-tight container.
In a large bowl, whip cream until soft peaks form. Gradually add 1 tbsp sugar and vanilla, beat until stiff peaks form. Spoon whipped cream into dessert dishes and sprinkle with caramelized walnuts.
