Georgian Chicken With Herbs (ჩახოხბილი)

Chakhokhbili - a traditional Georgian dish. Originally, a pheasant was  the main ingredient, but these days chicken is more widely used.

2 tbsp butter
10 chicken thighs
4 medium onions, chopped
3 cups grape tomatoes, halved 
3 garlic cloves, minced
1 cup chopped mixed fresh herbs (parsley, cilantro, tarragon, basil, dill)
1/8 tsp dried hot red pepper flakes
Salt and pepper to taste

Season the chicken thighs on both sides with salt and pepper. Melt the butter in a large pan over medium-high heat. Add the chicken and brown well on both sides. Remove thighs from the pan and set aside. Place onions to the pan and cook until tender. Add tomatoes and cook for 5 more minutes, stirring occasionally. Return the chicken to the pan, cover and simmer on low heat for 30 minutes or until the chicken is cooked through. Stir in the garlic, herbs, hot red pepper flakes, season to taste. Cook for 10 more minutes. Serve hot.

  1. wow all of your meals look so elegant. i love the use of fresh herbs!!! i'm not so familiar with tarragon though so many recipes call for it. i shall try it soon. your blog makes me want to be in europe right now!
