Shortbread-a classic Scottish dessert. These rich and buttery cookies are perfect with cup of  tea, coffee or glass of milk.

1 cup butter, softened
1/2 cup sugar
1/4 cup ground almonds 
2 1/2 cups all-purpose flour
1 tsp lemon zest

Preheat oven to 350 F. Lightly grease a large baking tray .
In a large bowl, cream the butter, lemon zest and  sugar until light and fluffy. Add the flour and ground almonds. Mix well.
Press the dough into the baking tray until evenly spread. Bake for 20 minutes or until lightly brown. Remove from the oven, let cool 2 minutes, then cut into finger size bars. Let cool completely in the tray.
