Lithuanian Cold Beet Soup (Šaltibarščiai)


2 large beets, cooked, peeled and coarsely grated
2 cucumbers, diced
2 hard boiled eggs, diced
6 tbsp sour cream
4 cups plain kefir
1 cup boiled water, chilled
1/4 cup chopped fresh dill
1 cup scallion greens, chopped
salt to taste

Mix well all the ingredients. Garnish with hard boiled egg slices. Serve with hot boiled potatoes.

  1. Mmmm this looks yummy. I have been living in many different countries in Europe (Estonia, Sweden, England, Switzerland) and I know how rich is the food culture. I should try to do some lithuanian recipes.
