Caviar , the fish roe, is considered a delicacy around the world. In this Ukrainian recipe it adds a tuch of luxury to a simple deviled eggs.
3 eggs, hard boiled and halved, lengthwise
4 spring onions finely sliced
2 tbsp mayonnaise
1/4 tsp mustard
1 oz caviar
salt and pepper to taste
Remove the yolks from the halved eggs. Mash the yolks to a smooth paste in a bowl with the spring onions, mayonnaise, and mustard. Mix well and season with salt and pepper. Fill the egg whites with the yolk mixture and arrange them on a serving dish. Spoon a little caviar on top of each just before serving.
