Gazpacho



Gazpacho is a traditional Spanish soup that was originated in Andalusia. It is perfect for hot summer days, because it is served ice cold. This delicious and refreshing soup is super healthy and packed with vitamins.

3 slices white bread, crusts removed
8 large ripe tomatoes, peeled, seeded and chopped
1 cucumber, chopped
1small onion, chopped
1 small red or green pepper, chopped
2 garlic cloves, crushed
2 tbsp olive oil
2 tbsp red wine vinegar
2 tbsp tomato paste
salt to taste
1-2 c iced water

Reserve 1/3 of tomatoes, cucumber, pepper and onion. Process all the remaining ingredients, except water, in a blender or food processor until smooth. Thin mixture to desired consistency using iced water. Adjust the seasoning and chill for 1-2 hours. Serve sprinkled with the reserved tomatoes, cucumber, peppers and onion.
