Horiatiki salata or Greek salad is a rustic country salad. I love it for its simplicity and rich flavor.
1 cup grape tomatoes, halved
1 medium cucumber, diced
1 medium red onion, sliced
1 medium red bell pepper, sliced
1/2 cup pitted Kalamata olives
6 oz feta cheese, cubed
1/2 cup extra virgin olive oil
1-2 tsp dried oregano
salt and pepper to taste
In a large bowl combine tomatoes, cucumber, onion, bell pepper, olives, feta. Season to taste. Drizzle with the olive oil, add the oregano. Toss everything until evenly coated and serve.
